Lee Quessenberry's Prize Winning Shoulder

Lee Quessenberry's Prize Winning Shoulder Recipe:

Items Needed:

  • 1 Charcoal Grill Big Enough For a Pork Shoulder (Weber Kettle Grills Do Great)
  • 1 Pork Shoulder
  • 1 Roll Heavy Duty Reynolds Aluminum Foil
  • 2lbs. Turbinado Sugar
  • 1lb. Lawry's Season Salt
  • Meat Thermometer
  • 1 Jar (Sauce Beautiful) Barbeque sauce
  • 1 Gallon Vinegar
  • 1 Stick of Butter
  • 1 Cup of Salt
  • 1 sauce pan

Preparation:
In order to cook an awesome pork shoulder you will want to use indirect heat. To do so in a kettle grill, build a fire with 10lbs of charcoal on one side of the grill. The best time to cook is when the fire is glowing orange with white coals. (an ideal temperature of 275 degrees is recommended.)

Now That The fire is getting ready, Pull out a sheet of aluminum foil big enough to wrap the entire shoulder and lay it flat on a table. Place the shoulder in the middle of the foil rectangle. Find a good size mixing bowl and pour the 2lbs of turbinado sugar and 1lb of season salt into the bowl. Make sure your hands are dry and mix them together until it is a soft orange color and the mix is very consistent. Now, liberally apply and rub the mix into all sides of the shoulder including the fatty side. Place the shoulder onto the grill opposite the side of the fire. Place the lid onto the grill with the smoke damper over the shoulder away from the fire. Make sure the smoke damper is 3/4 of the way closed to allow the fire to breath, but not get too hot.

Pour the vinegar into a saucepan along with a cup of salt and a stick of butter. Place on an oven or other heat source until a boil while stirring to keep a good mix. Occasionally while the shoulder is smoking, baste or pour the vinegar sauce on the shoulder to keep moisture. After about 4 hours, wrap the shoulder completely in foil and continue to cook until the internal temperature of the meat is 167-170 degrees. When this temperature is achieved, your work cooking is done. Now you and several of your friends can enjoy fine southern barbeque.
